History of Baking & Art Class

Thursday and Friday consisted of learning information that we could not learn in a kitchen. We studied the history of baking, how ingredients are used in baking, and a little bit about art. Our instructor, Chef Sebastien Canonne may be a culinary genius, but don't let that fool you. The man is hysterically funny and an absolute comedian. Our other instructor, Chef Scott Green is a natural born artist, and he taught us the basic concepts of design. For teaching purposes he made a showpiece which demonstrated good design techniques. He whipped this together in his spare time the night before, then he showed up a little early for class and put it together. It is made completely out of sugar.... isn't it amazing?
